Getting a nutritious, filling, and delicious breakfast these days can be difficult. These Applesauce Muffins are one of my favorite breakfast items. Great flavor and flexible enough to add some extra healthy items to the muffins so they keep me full all morning! Plus they are easy to eat on the go. What more could you ask for!
Getting a healthy breakfast on busy mornings has always been hard for me. Egg dishes keep me full but leave me feeling kind of gross afterward. Carbs usually mean I am hungry by 10 am. These muffins have enough protein that I stay full all morning, plus they are easy to take with me which is a huge perk!
The basic recipe is below. I also added some notes of substitutions and additions you can make based on your personal preference.

Applesauce Muffins
Ingredients
- 1 cup softened margarine or butter
- 2 cups white sugar
- 2 each eggs
- 1 tsp vanilla extract
- 4 cups white flour You can also substitute 2 cups of whole wheat flour for half of the white flour.
- 3 tsp cinnamon
- 1 tsp ground cloves
- 2 tsp allspice
- 2 tsp baking soda
- 1 pint unsweetened applesauce 1 pint is equal to 2 cups
- 1 cup chopped walnuts
Instructions
- Cream margarine, sugar, eggs, and vanilla.
- Combine flour and spices in a separate bowl.
- Stir baking soda into the applesauce.
- Add ⅓ of the flour mix and combine into creamed margarine, add ½ of applesauce and combine into creamed margarine.
- Follow with ⅓ flour and the remainder of applesauce.
- In the final addition of the last of the flour, stir in nuts and ensure the batter is thoroughly combined.
- Grease muffin tins and fill ⅔ full with batter.
- Bake for 20 minutes in a preheated 400-degree oven.
- They are done when they are lightly browned and spring back to the touch.
- Remove from the oven and let cool for a few minutes before removing with a spoon to a cooling rack.
Notes
- These store in an airtight container on the counter for up to three days, or freeze wonderfully for up to a year.
- You can use sweetened applesauce but would want to reduce the amount of sugar added.
- For additional nutrients, you may add up to ¼ cup of either ground flax, oat bran, oatmeal, chia seeds, or hemp hearts. I wouldn't add more than two of these, and you may need to use a little less flour to keep the muffin texture right.
- Dried fruit or dates would be a good addition to get some additional fiber and nutrients.
- For additional protein, you may add up to ¼ cup of protein powder with the flour. You will probably need to reduce the amount of white flour to keep the muffin texture right.
- The recipe calls for walnuts, but you can use any nut that will grind if you want to make a substitution for your preferred variety of nuts.
- As a child, I ate these with butter for breakfast before school. Now as an adult, I will still top with butter or top with almond butter to add a little extra protein to keep me full!
