One of the things I hear most from hustling women is how hard it is to get a healthy, filling, reasonably priced breakfast in the morning when you are headed to work. I am starting a series to share ideas for breakfast that are healthy, can travel or be eaten on the go, and are cheaper than a coffee and muffin combo at your favorite coffee shop. I am starting with a savory Egg & Cheese Biscuit Sandwich that should check all of the boxes!
Finding the right balance of taste, ease, and the right nutrients is a tricky combo to get right for each person! Usually, egg-based dishes are too heavy for me when you combine them with egg, cheese, and meat. One of the reasons I love this breakfast sandwich is the cheesy herby flavor means I love it with just an egg and don’t need to mess with bacon or sausage.

This recipe makes 6 large biscuits designed for a breakfast sandwich. It is easy to double too. These biscuits freeze really well. So, you can just grab one in the morning and defrost it while your egg is frying. Sometimes, I add a slice of cheese to it, but there is so much cheddary goodness mixed into the biscuit that extra cheese is not needed.
Pair this with a piece of fruit and you have a protein-packed, tasty breakfast you can take on the go. Wrap this in a piece of foil or waxed paper and you can walk right out of the house with it.

Make the Biscuit
Egg and cheese biscuit
Ingredients
- 2 cups white flour
- 3 tbl cold butter diced in small cubes
- 2 tbl fresh minced chives or green onions
- 1 tbl baking powder
- 1 tsp sugar
- 3/4 tsp salt
- 3/4 tsp garlic powder
- 3/4 tsp onion powder
- 1/4 tsp paprika
- 6 oz shredded cheddar cheese
- 1 1/4 cup cold buttermilk
Instructions
- Preheat your oven to 400 degrees.
- To the flour, add the diced butter and rub it into the flour until it resembles small peas.
- Then add the chives, baking powder, sugar, salt, garlic powder, onion powder, paprika, and cayenne pepper and stir to combine.
- Add shredded cheddar cheese and stir so it is coated with flour to prevent sticking.
- Stir in the cold buttermilk to form a soft dough. Make sure that you get the little flour bits from the bottom of the bowl combined. Don't overwork the dough.
- Spoon into 6 large biscuits on a baking sheet.
- Bake at 400 for 22-25 minutes. I would check them at the 20-minute mark and make sure the tops are not getting too brown.
Assemble the sandwich!
This part is super simple so you can get out of the door fast!
- Fry an egg to your liking. You can do this with scrambled eggs, but it may be a little messier to eat.
- Split the biscuit in half and warm in the microwave.
- Add the cooked egg to the middle.
- If you are on the go, wrap the sandwich in foil or waxed paper to keep warm. This is much easier to eat.
- Enjoy and have a great day at work!

It is really easy! The butter step takes a minute or two, but otherwise, just stir wet and dry ingredients together and spoon into biscuit shapes on a cookie sheet! You can totally do it! Plus, even if they look a little ugly or funny, they will still taste delicious!
