Fall has arrived and it is soup season! One of the reasons I love this soup so much, it is light enough to enjoy over the summer with lots of fresh veggies on top. I am so excited to share this Chicken Tortilla Soup with you!

The soup is a simple mix of chicken, white beans, and corn with a flavorful green chili broth. A fun take on traditional chicken soup, but with the same magical healing properties!
This is a great soup to serve to a crowd. The soup base is pretty basic, but then everyone can customize their bowl to their own personal tastes with the toppings. My perfect toppings are cilantro, sour cream, diced avocado, and plenty of lime juice! Delicious!
All of the ingredients are cooked before going into the soup, so you are only heating it up enough to heat them through, not to cook. Which makes this ready to dish up in about 25 minutes!
I usually serve this with bread or a roll on the side. This week, I made my favorite cheesy, herby, tasty drop biscuits to go with it! Often I will have guacamole, salsa, and chips out for people to snack on or include as a side dish.

This is also a great soup to use leftover turkey in after a holiday! The roasted turkey gives it a slightly different flavor, but the delicious green chili flavor is welcome after the heaviness of the holiday dinner! I know you are excited about the recipe so….

Go-To Meal: Chicken Tortilla Soup
Ingredients
- 1 each Rotisserie chicken. Can substitute 3 cups of diced cooked chicken
- 3 quarts Chicken broth
- 8-16 oz Salsa verde. I usually use Herdez Brand
- 1 1/2 tsp Cumin
- 2 cans Cannellini beans, drained and rinsed. (You can substitute navy or garbanzo beans)
- 2 cans White shoepeg corn, drained
- Various toppings are listed below
Instructions
- In your large soup pot, add broth, up to 8 oz of salsa verde, and cumin. Turn on the heat and begin to warm the soup.
- Remove chicken meat from rotisserie chicken or chop already cooked chicken so you have about 3-4 cups of chicken.
- Add the chicken to broth.
- Add cans of corn and beans to soup.
- While it is simmering, assemble the toppings listed below.
- Bring up to a simmer and taste. Add additional salsa verde to taste.
- Heat 10-15 minutes until all ingredients are heated through.
- Now the fun starts! Dish up the soup and top with any (or all) of the following toppings!
- Fresh chopped cilantro, fresh squeezed lime juice, grated cheese, sour cream, crushed tortilla chips, diced avocado or guacamole, sliced radishes, fresh salsa
Notes
- Toppings are the best part of this soup! I included what I and my friends enjoy but feel free to get wild! Sliced jalapenos…. Hot sauce….. Diced green onions…...Cotija cheese…..diced tomatoes. The possibilities are endless!
- This soup can be made vegetarian by using veggie broth and substituting 2 additional cans of garbanzo beans in place of the chicken.
- I usually splurge and get the rotisserie chicken that is already taken off the bone, or will throw in a few chicken breasts into the oven to bake earlier in the week when I bake something else.
- If you wanted this to be full of shelf-stable ingredients that you can keep on hand, you could use 2-3 cans of high-quality canned chicken (I like the Costco variety).
- This soup freezes wonderfully, so make a full batch, but you won't have to eat it every day for a week!

This is a great beginner soup! It is as easy as you can get especially if you buy pre-shredded rotisserie chicken! Literally, dump and heat!
My body has a low tolerance for spicy foods, lol, but I am glad the heat is mainly in the toppings. I haven’t tried tortilla soup, so this is something for me to try.
The best part of this soup is you can adjust the amount of salsa in it. So for you, I would recommend only 4oz to start and taste it. The soup will be more chicken flavor than Mexican flavor but will definitely not be spicy!
