Welcome to breakfast nirvana! These hash brown egg nests or breakfast cups have everything you could want in a breakfast, all packed in a nifty little cup! They are easy to eat and take with you in the busyness of the morning. Plus they give you some protein so you can avoid that 11 am hangry moment!

How can hash brown egg nests save you money?
We have talked a lot about the benefits of having a few easy-to-make meals ready to go to avoid the cost of getting takeout. A breakfast of two egg bites and coffee at Starbucks can quickly add up to $10 or more. So getting breakfast and coffee each workday morning will cost you approximately $200 a month. That’s a lot!
I am a fan of Starbucks, but consider using Starbucks as a treat on really tough mornings or special mornings, rather than an everyday occurrence. Instead, make a tasty Cold Brew Oat Milk Latte at home, grab two of these, and your breakfast will easily cost you under $5.
Now, I am a firm believer that the “latte factor” is not causing the demise of Millennials’ wealth-building (the credit goes to student loans, stagnating wages, and increased housing costs, thank you very much).

However, keeping an eye on your expenses and using eating out as a “treat” rather than a daily expectation can keep your spending under control and give you more room in your budget for retirement savings or pay off debt faster.
Ok, enough money talk, I am hungry!

Hash Brown Egg Nests
Ingredients
- 20 oz bag of refrigerated hash browns You can use frozen, just let thaw first.
- 4 tbl vegetable oil
- 1/2 cup cheddar cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 6 ea eggs
- 4 tbl cream
- 1/2 cup cooked breakfast meat Ham, Bacon, or Sausage all work well
- 1 cup cheddar cheese
- 1/2 cup cooked veggies of your choice Mushrooms, peppers, spinach, tomatoes, or anything else you love!
Instructions
- Preheat the oven to 400 degrees.
- Take the hash browns in a bowl and mix with oil, cheese, salt, and pepper.
- Grease 12 muffin cups in a muffin tin very very well!
- Take ⅓ cup of the hash brown and cheese mix and press into the bottom of the muffin tins and up the edges.
- Bake at 400 degrees for 25 minutes.
- While the cups are baking, work on prepping your eggs and toppings!
- When the cups are baking, mix up the egg mix including eggs, cream, breakfast meat of your choice, cheese, and cooked veggies. Stir well to combine.
- When the hash browns come out, scoop the egg mixture into the cups close to the top.
- Bake at 400 degrees for 12-15 minutes until the egg mixture is set.
- Once you remove it from the oven, run a knife gently around the edge of each muffin, but don't try to remove it yet. Let it cool and firm up for about 5 minutes before gently removing it from each muffin tin.
Notes
- Makes 12 muffins
- To make these vegetarian, omit the breakfast meat and increase the veggies to 1 cup.
- The bottom of a measuring cup will help with pressing, and it is ok if the hash browns come up above the edge of the muffin tin.
- These freeze incredibly well. I will remove it from the freezer, and microwave in the morning for about a minute or two depending on the size until they are warmed through.
- Top these with a little salsa, sriracha, or guac for some extra flavor!!
- These can be a little tricky to get out of the muffin tins. If you have a silicone muffin tin or liners, this would be a great place to put them in use!
I hope you enjoy these hash brown egg nests!! My last batch included sausage, onions, and diced tomatoes, and they were delicious! I love the texture that the hash browns give the cups so they are more than just a soft-baked egg bite.
