Air Fryer Frozen Coconut Shrimp

A quick and delicious dinner using frozen coconunt shrimp cooked in an air fryer.

Equipment

  • 1 Air Fryer
  • 1 Microwave

Ingredients

  • 2 servings Coconut Shrimp (on my package that was 14 shrimp)
  • 1 bag Microwavable Jasmine or Basmati Rice
  • 2 cups Fresh chopped broccoli
  • 1 tbsp olive oil
  • 1/2 tsp garlic and herb seasoning like Ms Dash.
  • Sweet Chili Sauce or other sauce for dipping/drizzling

Instructions

  • Preheat your air fryer to 400.
  • While it is preheating, pull out your shrimp from the freezer and start chopping your broccoli into florets. Toss your broccoli with olive oil and seasoning.
  • Add your shrimp to the air fryer and keep them in half of the basket and set the timer for 10 minutes.
  • When 7 minutes are left on the timer, add the broccoli to the other half of the basket and flip the shrimp over.
  • Let the shrimp and broccoli cook the remainder of the time.
  • When a couple of minutes are left on the shrimp and broccoli, heat rice in your microwave according to package directions.
  • When everything is finished cooking, plate with 1 serving of shrimp, ½ of the rice, and ½ of the broccoli. Use the second serving for your dining companion, or package it up for lunch tomorrow!
  • Drizzle your plate with your preferred sauce and add a little on the side for dipping! Enjoy!

Notes

  • Calories are for 632 1 serving of 6 shrimp, ½ of the broccoli, ½ of the rice, and 2 TBL of a sauce.
  • The cost is $11 for 2 servings which works out to $5.50 per serving.
  • Feel free to substitute your favorite sauce, like soy sauce, ponzu, hoisin, or another dipping sauce for the Sweet Chili Sauce. It would also be delicious with a drizzle of lemon juice!
  • Use your favorite veggie with this dinner. Broccoli is a favorite of mine and what I had on hand at the time. 
  • Any rice or pasta mix would be tasty! A Pasta-Roni style pasta would make it similar to fettuccine alfredo! That sounds like a delicious combo!
