Air Fryer Frozen Salmon Dinner for Two!

Everything you need for a healthy and delicious dinner made in the Air Fryer and Microwave only!

Ingredients

  • 2 Each 6 oz frozen salmon filets
  • 1/2 tbsp Melted butter or margarine
  • 1 tsp Lemon juice
  • 1/2 tsp Garlic and herb seasoning like Ms. Dash
  • 1 bag Ready to eat microwave quinoa and brown rice
  • 2 cups fresh chopped broccoli
  • 1 tbsp olive oil
  • 1/2 tsp Garlic and herb seasoning like Ms. Dash
  • Salt and Pepper to taste

Instructions

  • Preheat your air fryer to 390 degrees. While it is preheating, remove your fish from the packaging.
  • Once the air fryer is preheated, lay the salmon on the skin side down and set the timer for 15 minutes. Try to keep the salmon on ½ of the basket because we will be adding the broccoli to the basket shortly. 
  • Chop the broccoli into small florets and toss in a bowl with olive oil and seasoning.
  • When there are 7 minutes left on the air fryer timer, add seasoned broccoli to the basket.
  • Mix lemon juice, melted butter, and seasoning together. With 4 minutes left, open the basket quickly and brush seasoning on the salmon and continue cooking.
  • With 2 minutes left on the timer, microwave quinoa according to the package directions.
  • When the timer is done, check fish and broccoli to ensure they are done. Brush remaining butter and lemon juice mix on salmon.
  • Serve 1 salmon filet with ½ of the quinoa package and 1 cup of broccoli.

-Total cost $9.20 for 2 servings or $4.60 per serving (based on prices at Safeway in a medium cost of living location)
-You can adjust the seasoning added to the salmon and broccoli according to your preferences. The salmon would be tasty with a spicy cajun seasoning, or other mixture of herbs and spices. I love this Ms. Dash seasoning that can be used on pretty much any dish!
-Feel free to substitute the suggested side dishes and veggie with something you love! This is the quinoa and rice side dish I used. 
-You have a second serving left to either have for lunch the next day (save money by not eating out!), or leftover for dinner tomorrow, or invite a friend over and share a meal together. 
-You could mix this up a bit by substituting teriyaki sauce or a siracha/honey mixture for the lemon butter and make this a Teriyaki or sweet/spicy salmon with white rice instead! Whatever you are in the mood for, this recipe is super flexible!
-If you don't have an air fryer, you can also bake the fish, and microwave/steam the broccoli to make this dinner, it will take 5-10 minutes longer but be just as delicious!
