One of my favorite childhood meals was fish stick night. We would have those skinny Gorton’s fish sticks with macaroni and cheese and peas on nights when my parents needed an easy meal. For some reason, those flavors have stuck with me, but I am upping my fish stick quality as an adult! Check out my Air Fryer Fish Sticks Dinner for Two, complete with cheesy pasta and frozen peas! It is a tasty and budget-friendly meal that will bring you back to your childhood!

I wanted to mix this meal up a bit, so I upgraded the side dish from EZ mac to a cheesy Pasta-Roni microwave bowl. This heats in minutes and is a warm, cozy side dish for dinner. Add your favorite tartar sauce, and you have a fast and filling meal!
This is an easy meal to customize to your taste! If you are looking for healthier options, swap the pasta for a whole grain quinoa mix. You can also add a side salad or double the serving of vegetables to 1 cup to boost your nutrition. It is easier to eat at home when you are flexible and make things you really enjoy and look forward to eating!
Let’s make dinner!

- If the Pasta-Roni side dish is not your favorite, substitute it for something that you like better or meets your nutrition goals. EZ mac, rice, or pasta would all work well with this meal.
