A single-serving baked oatmeal cup is one of my favorite make-ahead freezer breakfast recipes. Warm and cozy flavor, plus easy for portion control and to eat on the go! What more can you ask for!
In honor of fall, my last batch of these was Cinnamon Pecan which was so festive and tasty! My normal go-to choice is making 6 with blueberries and 6 with chocolate chips. That way, for breakfast, I can have one healthy and one tasty! You can guess which is which.
Not only can you customize the mix-ins, but you can also customize the toppings. Since I eat these on the run, I don’t top these with anything like syrup or honey like some do. Instead, I focus on the flavor and will add a little extra sweetener depending on what I mix into it.

These are super flexible for any diet. You can also make them vegan by using vegan butter and substituting a flax egg or other egg replacer. Single-serving baked oatmeal cups are the perfect breakfast!
I also will mix in a few tablespoons of protein powder into these to get a little extra protein in my diet. Plus the chocolate protein powder makes these almost cookie-like! It feels like eating dessert for breakfast, but they are still healthy! Score!
These freeze incredibly well. In the morning, I just pull them out and heat them for 1 minute to 90 seconds in the microwave. I let them cool a bit and then slip them in a plastic bag to enjoy as I head out the door.

Single Serving Baked Oatmeal Cups
Ingredients
- 3 cups Old Fashioned Oats Steel Cut works well, but quick cooking oats are too runny
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 cup brown sugar
- 2 tbsp flavored protein powder I use vanilla usually
- 1/2 cup unsweetened applesauce
- 1 1/2 cup milk
- 2 each eggs
- 3 tbsp melted butter
- 1 tsp vanilla extract
- 1/4 cup mix in items like berries, chocolate chips, nuts, or anything that sounds tasty!
Instructions
- Preheat the oven to 350 degrees F.
- Coat a muffin tin thoroughly with cooking spray. If you have silicone muffin cups, this would be a great place to use them!
- Add the oats, baking powder, cinnamon, brown sugar, protein powder, applesauce, milk, eggs, butter, and vanilla to a large bowl.
- Stir until well mixed.
- Fold in your mix-ins of choice.
- Spoon oatmeal mixture into the well-greased muffin tin until they are about ¾ full
- Bake for 20-25 minutes until they are golden brown and set when touched gently.
- Cool in the tin for about 5 minutes and then gently run a knife around the edge of each tin.
- Cool for another 5 minutes and then gently loosen and remove each from the muffin tin.
- Serve warm, or cool thoroughly before storing in the fridge or freezer.
Notes
- These are great topped with Maple Syrup, honey, berries, or a swipe of peanut butter.
- Make these muffins vegan by using a vegan butter and egg replacer!
- Substitute the applesauce for any other pureed fruit/veggie like banana, pumpkin, sweet potato for a change in flavor.
- These cups can be stored in an airtight container in the fridge for up to 5 days or wrapped well and stored in the freezer for up to 4 months.
- Silicone muffin liners help a ton with ensuring these don't stick.
How can single-serving baked oatmeal cups save you money?
I love using oatmeal for breakfast. Even when adding in an expensive ingredient like berries, the cost of these muffins is so low because oatmeal is so cheap. You can eat two of these muffins for less than a dollar. I am an advocate for treating yourself, but be aware of lifestyle creep. Treats are fine, but it is easy to increase the frequency of those treats and end up spending $50-$75 a week just on breakfast and coffee! By supplementing your breakfast with these, you are easily saving $5 a breakfast when compared to the price of getting something from Starbucks or McDonalds.
Start with adding these to your breakfast twice a week and see if you can increase the frequency as you try new flavors!
