Single Serving Baked Oatmeal Cups

A quick and freezer-friendly oatmeal breakfast to eat on the go

Ingredients

  • 3 cups Old Fashioned Oats Steel Cut works well, but quick cooking oats are too runny
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 cup brown sugar
  • 2 tbsp flavored protein powder I use vanilla usually
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cup milk
  • 2 each eggs
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • 1/4 cup mix in items like berries, chocolate chips, nuts, or anything that sounds tasty!

Instructions

  • Preheat the oven to 350 degrees F.
  • Coat a muffin tin thoroughly with cooking spray. If you have silicone muffin cups, this would be a great place to use them!
  • Add the oats, baking powder, cinnamon, brown sugar, protein powder, applesauce, milk, eggs, butter, and vanilla to a large bowl.
  • Stir until well mixed.
  • Fold in your mix-ins of choice.
  • Spoon oatmeal mixture into the well-greased muffin tin until they are about ¾ full
  • Bake for 20-25 minutes until they are golden brown and set when touched gently.
  • Cool in the tin for about 5 minutes and then gently run a knife around the edge of each tin.
  • Cool for another 5 minutes and then gently loosen and remove each from the muffin tin.
  • Serve warm, or cool thoroughly before storing in the fridge or freezer.

Notes

Notes:
  • These are great topped with Maple Syrup, honey, berries, or a swipe of peanut butter.
  • Make these muffins vegan by using a vegan butter and egg replacer! 
  • Substitute the applesauce for any other pureed fruit/veggie like banana, pumpkin, sweet potato for a change in flavor. 
  • These cups can be stored in an airtight container in the fridge for up to 5 days or wrapped well and stored in the freezer for up to 4 months. 
  • Silicone muffin liners help a ton with ensuring these don't stick.
