Equipment

  • 1 Air Fryer
  • 1 Microwave

Ingredients

  • 2 filets Frozen fish fillets
  • 1 package Ready to eat microwave quinoa and brown rice
  • 2 cups Fresh chopped broccoli
  • 1 tbsp Olive oil
  • 1/2 tsp Garlic and herb seasoning like Ms. Dash

Instructions

  • Preheat your air fryer to 400 degrees. While it is preheating, remove fish from the packaging and add any seasoning to it (unless it is pre-seasoned).
  • Once the air fryer is preheated, lay the fish filets in the basket, allowing room for the air to circulate and to add broccoli later. Set the timer for 7 minutes.
  • While the fish is cooking, chop your broccoli into bite-sized pieces and toss with olive oil and seasoning.
  • When 7 minutes have elapsed, open the air fryer and gently flip fish filets over. Add the broccoli and let cook for 8 minutes.
  • When 2 minutes are remaining on the timer, cook the rice according to the package directions in the microwave.
  • When all of the components are fully cooked, plate with 1 fish filet, 1/2 of the rice, and 1/2 of the broccoli for each serving. Enjoy!

Notes

  • Each serving consists of 1 fish fillet, 1/2 of the brown rice and quinoa mix, and 1 cup of cooked broccoli. Calories for this meal are 690 per serving and the cost is $4.90 per serving.
  • Adjust this for your taste and flavors by changing up the side dishes and veggies. This would be delicious with cheesy pasta or some fresh roasted brussels sprouts!
  • You can use any breaded white fish fillets that your store has in stock. This would be delicious with cod, tilapia, or any other type.
